I know that eating bland ol' boring brown rice all the time can make you feel like you are on a diet and that is the last thing we want.  So I challenge you to try all of these recipes and also start getting creative yourself.

Healthy Recipes For Brown Rice

1.  Veggie Brown Rice:

Cook Brown rice as per instructions.  Meanwhile in a sauté pan with a little stock cook up your favorite veggies, for example:  zucchini, onions, and squash.  Add a little garlic and herbs seasoning and some fresh basil.  Once cooked fold into the brown rice and add in a handful of shredded mozzarella (this part is optional depending on where you are in your program, but it sure does make it ooey gooey  and yum.)

2.  Chinese Brown Rice:

Cook Brown rice as per instructions.  In a separate pan cook 3 egg whites, scrambled.  Use whatever veggies you have left over from the week or roast some now, example (broccoli, asparagus, red peppers).  Fold in the veggies to the rice as well as the scrambled egg whites.  Add in some toasted almonds or cashews and sprinkle with a few tablespoons of balsamic vinegar.

3.  Tex-Mex Brown Rice:

Cook Brown rice as per instructions.  Meanwhile, combine 1/2 cup of fresh (organic if possible) salsa with 2 tsp of cumin.  Fold in to the rice and top with 1/4 cup of fresh chopped cilantro.

4.  Nutty Herbed Brown Rice:

Cook Brown rice as per instructions.  Fold in your favorite herbs, example (parsley and scallions).  Then fold in your favorite nuts (toasted pine nuts) but could be almonds, cashews, pumpkin seeds or sesame seeds.

5.  Caprese Brown Rice:

Cook Brown rice as per instructions.  Fold in 1 cup of fresh chopped tomatoes and 1/4 cup fresh chopped basil.  Drizzle in 1/4 cup of rice vinegar and mix well.

I shouldn't look at these on fast sudany. Panchito in Cartersville made us chilaquiles the first time i ever had them and they weren't fried duros, and i loved them. I prefer them a little soft still. But panbazos or Laura's mole? Sweet sassy molassey that would hit the spot.
