Gluten-Free Mini Chocolate Chip Protein Muffins

I say it all the time, but I still can't say it enough...............

Being PREPARED and having healthy snacks ready and available are half the battle.  This is why I made my BeFit Moms Fat Loss Meal Plan.  So that you can plan ahead and have a good plan for each week.  Filled with not only the meals but also delicious and healthy snacks.

When you have food ready and available and you can just take it on the road with you or to work, you WILL eat better and cleaner and  you WILL fall off the wagon LESS.

First of all, when too many hours go by without you eating, you have LOW BLOOD SUGAR.  When this occurs, guess what you crave?

Yep, SUGAR.  

And at this point it is incredibly hard to have WILL POWER.  So, if you have healthy snacks available, and ready, when its time to eat, you will have something healthy and you will prevent low blood sugar from making you eat "bad".  This is why in my BeFit Moms Fat Loss Meal Plan, I give tons of options and recipes for Healthy Snacks that you can take on the go.

You will also "Eat Less" if you have your healthy snacks with you in between meals.  Because if you don't, you will be starving by the time the next meal comes around and you will most likely "OVER-EAT".

Gluten-Free Mini Chocolate Chip Protein Muffins

Ingredients:

1 cup almond butter

2 bananas, very ripe

2 eggs

1 tsp vanilla extract

1-2 tbsp unsweetened applesauce

4 packets Stevia

1/2 tsp baking soda

1 tsp apple cider vinegar

1/4 cup gluten and dairy free chocolate chips

1 scoop vanilla protein powder (I use Prograde)

Instructions:

Preheat the oven to 350 degrees.  Place all the ingredients in a blender or food processor except the chocolate chips.  Blend until well mixed and then fold in chocolate chips, pour into a coconut oil lightly greased mini muffin pan and bake for ~12-15  minutes or until done.

You are going to love these, they are ridiculously easy to make and they are great for on the go.  Just throw them in a little ziplock bag and take them with you to work or to run errands, etc.

They are also delicious, so you will enjoy them and not feel like you are "on a diet".

I'm telling you, its worth pre-making snacks and having them available and knowing what your meal plan is for the week.  I promise, it will make you more successful at reaching your fitness and health goals.
