Healthy & Easy Chicken Recipe & Ask Me Any Question

I hear this all the time...... "I don't know what to cook for dinner tonight", "What can I make with chicken", "Im tired of the same old grilled chicken", "I'm tired of all my recipes", "I hate eating diet food", "Eating healthy is hard".  Well my friend, I am here to tell you, that it does not have to be hard.  It can actually be really easy and really enjoyable.  You just need some great ideas and some delicious tasting healthy recipes.  So that is what I am going to do for you today.  I am going to give you a healthy recipe that is actually quite versatile and you can make it many different ways.

Before I give you this really easy and yummy healthy recipe, I want to remind you that eating healthy and delicious is simple, it just takes a little bit of work.  You have to do your research.  You have to look for recipes and strategies to make your favorite meals healthy.  The easiest thing to do, as I always say, is take one day of the week and look through cooking recipes, cookbooks, online etc.  I have tons of recipes on my site under "NUTRITION" so take some time every week to browse through them.  Here is one:  Healthy Recipes.

Gingery Veggie Chicken


1/2 cup low-sodium chicken stock

1/4 cup balsamic vinegar

3 tbsp cashew or almond butter

1tbsp ginger, grated

3-4 garlic cloves, grated

1 red peper, cut in chunks

4-5 green onions, chopped

2 cups asparagus, cooked and chopped (can be steamed, baked or grilled, maybe from leftovers)

1 1/2 cups shelled edamame, thawed

2 tsp agave nectar or honey

1 tsp dry mustard

1 tbsp EVOO

1/3 cup cashews, toasted and chopped

1lb chicken breast, boneless & skinless, cut in chunks


In a deep skillet or wok, cook the chicken in a little stock until browned.  Add the garlic and pepper and cook until veggies are softened.  Meanwhile in a medium bowl, whisk the broth, vinegar, almond or cashew butter, ginger, agave or honey and mustard. Set aside.  Into the skillet with the chicken, add the cooked asparagus or else cook it when cooking the pepper and garlic.  Add in the edamame and scallions and mix well to incorporate.  Drizzle in the sauce and fold well and top with cashews.

Alternatives to this Healthy Recipes:

This recipe is super healthy, super easy and ridiculously tasty!  Whats great is that you can play around with it.  

  • You can make this with shrimp, scallops or steak instead of the chicken.  
  • You can use whatever veggies you want. 
  • You can even make it super easy and just use left over veggies from another day.  
  • You can use sesame seeds or almonds instead of cashews.  
  • You can eat it by itself or you can serve it over brown rice.  You can even serve it over buckwheat/brown rice/quinoa noodles.  

Use this healthy recipe as a strategy and get creative and have fun with it.  This recipe can become a family staple!
