I sure do, that's why I love playing around with great recipes like this. This is a delicious side dish that makes you feel full and satisfied and its also a great snack. And for those vegetarians or people doing Plant based days where you eat no protein, this is one delicious, filling and satisfying meal.
And if you didn't know, tomatoes is one of the healthiest fruits. It is super high in the antioxidant lycopene which helps fight against cancerous cells. It is also very high in Vitamin C. No need to sip on Tropicana peeps, just try this yummy recipe.

Veggie Stuffed Tomato

Ingredients:
2 tomatoes
20oz fresh spinach
1/2 onion, diced
1 package of Portobello mushrooms, chopped
2 garlic cloves, minced
basil, oregano and grill seasoning to taste
1/3 cup cottage cheese
sprinkle of Parmesan
Instructions:
Cut the top off of the tomatoes and with a melon baller or spoon, take out the inside of the tomatoes, leaving a good sturdy shell. Bake the tomatoes for about 15 minutes and meanwhile, in a sauté pan with a little stock, cook the onions, garlic and mushrooms. When cooked through, add a little more stock and wilt in the spinach. At the end mix in the spices and cottage cheese and cook for a few more minutes. Spoon this mixture inside the tomatoes, sprinkle the parmesan on top and bake for another 15 minutes or until cheese melts and bubbles on top.
Seriously, this is so divine. I ate this with a piece of chicken that I drizzled some Wholy Guacamole on and I was so happy. Actually I could have just eaten the stuffed tomato and been very happy.
You have to try this. Its also a great lunch for the next day. So make sure to make plenty of them.
