Healthy Pesto Turkey Meatballs
My secret for being able to eat healthy CONSISTENTLY is to have a plan, always.
You must know me by now, if you have been following me for a while.....
I make a new meal plan every Saturday with a shopping list to go with it. Then I do my groceries on Sundays and stock up on everything I will need for the week.
Having A Plan
Having a plan of what we are eating all week and having it all available helps me be able to have healthy meals literally every day for lunch and dinner and it also saves me a ton of time and money.
I don't eat out unless I have to or want to for a fun play date or something, so I don't spend money on yukky food and I can control the quality of the food I eat. It's also easier to have WILL POWER when you have the food already there. If there are no ingredients at home to make something healthy and you don't know what to make nor do you have the energy to figure it out, its a lot easier to start picking at crap and making bad food choices.
After years and years of doing it all kinds of different ways and trying different diets, etc., I have found this to be the best way. I get the best results, with the least amount of time and I actually enjoy it. I don't feel like I'm dieting, I don't feel hungry all the time, I don't spend a ton of time cooking.... It's amazing!
And after 2 kids I am in the best shape of my life.
When I make my meal plan I make sure to make different foods.
I make sure to have fish, chicken, steak, turkey.......... I would hate to just eat chicken all the time.
That's when you say... "ugh, I can't eat like this anymore, screw it, Ill eat what I want, because eating like this sucks".
I feel ya!
Need A Meal Plan But Don't Know How To Make One
Now, its not that easy to be making different meals all the time, and finding ones that the whole family likes and are healthy and tasty. So I do spend a lot of time doing that, but you don't have to because I do all the work for you! I am always coming up with recipes like this to help you make your own meal plans.
But if you don't have time to make your own meal plans or you don't know how to put the proper foods together to help you lose weight, or you just don't have the time or energy, then you can just get my meal plans. But before I give you this awesome I have to make sure you have some things down first.
What You Shouldn't Eat
Because if you are not eating the proper foods and you are consuming foods that are very inflammatory, you will not get results no matter what you try to do. So let me share with you a list that I compiled of the 5 FOODS that you should absolutely get rid of in your diet if you would like to see any kind of results.
Because eating these foods cause so much inflammation in your digestive system that its close to impossible to lose weight. Inflammation in the body does not allow you to burn fat.

Ok, now that we have that clear, I can give you this yummy recipe that I made one day when I needed to get dinner done in like 5 minutes.
You gotta love these kinds of recipes.
I literally looked in my pantry and fridge, threw some stuff together and voila..... this amazingly delicious recipe came alive. These turkey meatballs are moist, full of flavor, super healthy and ridiculously easy to make.
By the way, I made a really great Pantry, Fridge & Freezer Grocerry List. It's pretty much what you should have stocked at all times. If you follow it, you can basically make any of my recipes and be able to eat super clean all the time.

Ok, now let me give you the recipe.
Healthy Pesto Turkey Meatballs
2 lbs lean ground turkey breast
3 -4 tbsp prepared pesto (or you can make your own)
1/2 cup low fat cottage cheese
2 egg whites
1 tbsp italian seasoning
1/4 cup low salt, low sugar marinara sauce
s&p to taste
Preheat the oven to 350 degrees. Meanwhile, mix all the ingredients in a big bowl and make into meatballs and place on a lined baking sheet and bake for ~25 minutes or until done.
How easy does that seem?
The day I made these I was in a super rush to get dinner on the table fast. But I was thinking that if I had some thawed spinach, I could throw that in there for some extra fiber and another opportunity to burn more calories.
I throw spinach into everything I can because it doesn't really taste like anything so its a great way to sneak veggies in to the kids and hubby. So you can try adding a whole package of frozen spinach, thawed.
I served this with brown rice pasta and I just added little of the marinara sauce and pesto that was left over in the jars.
I guess you could also throw some of the frozen spinach in the water while your boiling the pasta. I do that all the time when I make brown rice or quinoa pasta. The kids don't even taste the difference.
Literally took about 5 minutes of my time to prep this meal and it was so yummy.
It's perfect for a quick healthy fun week night meal. And you got your protein, carbs and veggies all in one meal.
I'm telling you, making yummy meals and different ones all the time will help you tons with being able to stick to your "diet".

Ground Turkey Veggie Scramble Recipe
One of the reasons I am always cooking and testing and creating new recipes is because I can’t stand to eat the same thing all the time.
Eating the same thing all the time makes me feel like “I’m on a diet”.
When I feel like I’m on a diet, I actually do worse with my diet.
Pretty crazy, but it’s true.
When I don’t really think about it much and I just make the best possible choices from meal to meal, I do so much better.
I think it’s because it doesn’t become “an obsession”.
I feel like people these days are OBSESSED with clean eating, dieting, losing weight, and exercise. It has become an obsession and not a lifestyle.
It takes all the fun out of it.
I love food.
I enjoy eating and I would never want to do anything to harm the healthy relationship that I have with food. So I put in some work, just like you would in any relationship.
I’m always looking for new recipes, testing new recipes, making meal plans, prepping food, cooking, etc.
I make sure to always make and eat foods that I enjoy and love.

I always say that being prepared is the key to my success, and it is.
It’s what helps me eat clean so consistently.
I make a meal plan for the week every single week. And I make it on the same day of the week every week. And I make my grocery list at the same time and I do my groceries for the week every week on the same day.

Doing things on a recurring basis helps me be more consistent which in turn helps me really make it a “lifestyle”. It’s just what I do.
One of the things that I do when creating my weekly meal plans is to make sure there is a good mix of foods. I hate to eat chicken 6 times a week. So I will make sure there is for example:
2 Chicken Dish
1 Turkey Dish
1 Lean Steak Dish
This is just an example. I just make sure to mix it up so that I don’t feel like I’m on a diet eating darn chicken and broccoli all week long.
I also make sure to have quinoa one day and brown rice another and beans another and I vary the types of veggies I cook too.
This is what I do in my Be Fit Moms Meal Plan Program.
I make the best combinations of foods that will help accelerate metabolism so you can burn more fat. I find the yummiest recipes so you never feel like you are dieting but can lose weight, and I vary them every week so that you don't get bored and not be consistent and we all know that consistency is the key to getting results.
I also give my BeFit Moms the shopping lists just to make it easier on them. Most of the ladies that do this program just don't have the time to do all of this every week, nor do they know the right combinations of foods to get the best results. And they tell me that they just can't do this consistently week after week. So I did everything possible to make it easy for them.
And so far they love it and they lose 2-6 lbs per week, its crazy!

I mean, there are some staples that I make weekly because my family likes them. For example, my kids like broccoli and asparagus so since veggies are harder for kids to eat and they like those, I make sure to make them every week.
You get the point?
Well, ground turkey is one of those foods that it’s hard to make in different ways. So I am always trying new ground turkey recipes because there are only so many meatballs and meatloaves I can handle.
I love making these “Ground Turkey Scrambles”.
I make them all the time but using different veggies and seasonings.
They are super easy to make and super yummy.
This one is so yummy and I love them because it’s an easy way to sneak in some veggies for the kids.
By the way, before I give you the recipe, I just want to give you some tips that will help you with your weight loss and fitness goals.
Because it’s not just about cooking even though it’s a big part of it.
I have found that a lot of people are “STUCK” with their weight loss because they are eating some of the wrong foods.
So I have to make sure you arenot eating one or more of foods on this list. Because if you are, it can be completely SABOTAGING your results. Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy (as you think), but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT.The reason is because these foods though some may think are healthy or not so bad, are actually very inflammatory.
Inflammation in the digestive track makes it incredibly hard if not impossible to burn fat. So in order to be able to burn fat so you can lose weight effectively, its crucial that you take these foods out of your diet.

Ok, here is the recipe.
Turkey and Veggie Scrample
2 lbs lean ground turkey
½ onion, chopped
3 garlic cloves, minced
2 zucchini, chopped
1 cup edamame, thawed and shelled
1 can diced tomatoes
Drizzle of Balsamic glaze
S&P to taste
Low sodium chicken stock for cooking
In a skillet with a little stock on medium heat, cook the onions, garlic and zucchini. Season with S&P to taste and add turkey. Cook until browned, adding a little stock if necessary. Once browned, add the diced tomatoes and season again with s&p. Fold in the edamame and drizzle the whole skillet with balsamic glaze. Mix well and serve!
How easy does that look?
And it is soooooo yummy! And I love that there are so many veggies in it. You could also add some spinach, that would be great in there too.

I hate feeling like I'm on a DIET.
That is why I invest so much time into COOKING.
I figure that if I can eat something different everyday and enjoy it, the chances of me eating clean consistently are way higher. Actually I don't figure...... Its 100%. And I find it to be the same for my clients.
Eat the same thing day in and day out and in a short amount of time, you will feel like you want to devour everything in front of you.
So not worth it.
Just invest a little time into planning your meals and cooking, and your results will be much better.
That's why I wrote my Eat To Be Fit Healthy Recipe Book, I spent about a year creating recipes that were tasty, healthy and enjoyable. I was so excited to be able to share it with all those people that think that to lose weight and get fit you have to eat chicken, brown rice and broccoli everyday.
When I make my WEEKLY MEAL PLAN (which I do every single week), I make sure to put in a chicken, a turkey, a fish and then I will repeat one or 2 of them. But always a variety of proteins per week.
Ground turkey I find to be one of my favorites because its so versatile and you can enjoy it so many totally different ways. In meatloaves (OMG, I have the best turkey meatloaf recipe in the whole world in my book), meatballs, sloppy joe's, chili's, etc.
This recipe for Asian Turkey Lettuce Wraps is to die for and I literally whipped it up in about 15 minutes.
I served it to the boys with brown rice but I had them on Boston Lettuce Leaves as wraps and they were insanely good.
I hope you add these to your meal plan next week. By the way, you better be making a meal plan every week. It makes your life so much easier, it helps you eat much cleaner and healthier and it actually saves you money also.

Asian Turkey Lettuce Wraps
2 lbs lean ground turkey
1/2 red onion, chopped
1/2 red pepper, chopped
1/4 cup hoisin sauce (I use a gluten-free version that is super low in sugar and sodium).
1/2 cup balsamic vinegar
1/2 tsp ginger
1 tsp garlic powder
1 cup thawed and shelled edamame
3 scallions, chopped
Boston lettuce leaves
Add a little low sodium stock to a skillet at medium heat. Add the onions and pepper and sauté until softened. Then add the turkey and cook until almost done. Add the hoisin, vinegar, garlic powder and ginger. Cook for a few minutes. Then fold in the edamame and scallions. Serve on top of Boston lettuce leaves and enjoy.
Seriously, how easy does this sound. Really, it took me minutes to make and its so yummy.
We loved to have it for left overs the next day. I had it with a little brown rice for lunch..... YUM!

I love to eat chicken, but sometimes I do get a little bored of it.
This is when I call out to my dear friend TURKEY....... And what better than in the form of ground turkey that is so easy and fast to cook. And of course full of protein.
I love that turkey is so versatile to use. You can basically throw in any veggies, any spices, mix it in with the turkey and have a delicious and healthy meal. It is also really good to use in the crockpot.
One of my favorite ground turkey recipes is my Balsamic Veggie Turkey Meatloaf. Its in my Eat To Be Fit Healthy Recipes Book and it is crazy delicious and sooooo healthy! Its got tons of veggies in it. I love making it because its so big that I have tons of left overs for the rest of the week.
Its great for a snack because its got the protein and veggies all in it.

Ok, here is the ground turkey recipe, enjoy!
Veggie & Ground Turkey Recipe
2 lbs lean ground turkey
1 1/2 tbsp chili powder
2 tbsp grill seasoning
1/2 onion, diced
3 garlic cloves, diced
1/2 red pepper, diced
2 zucchini or yellow squash, diced
1 can diced tomatoes with their juice
2 tbsp tomato paste
In a large skillet with a little stock, cook the onions, peppers, and garlic. Add in the turkey and brown. Add in a little more stock and the zucchini and chili powder. Cook for a few minutes and then add the tomato paste and tomatoes. Cook for a few minutes or until the turkey and zucchini are cooked and everything is well incorporated.
My family loved this dish and I hope that yours does too!
It really is nice to switch it up once in a while and eat something different.
I added a little wholly guacamole to the top of the turkey and served it with jasmine rice for the boys and they devoured it. I also had this for lunch the following day over a salad and it was really good. And I still had left overs so I served this up over the weekend for my hubby with some brown rice pasta. It was like a Healthy version of Pasta Bolognese. YUMMMMM

Eating healthy consistently is not that hard when you eat something different all the time, you enjoy what you eat, and you don't feel deprived.
Easy to say huh?
Much harder to live it!
Well, not so much. I am working hard to help you so that you can start playing in the kitchen and making some new and different meals for you and your family so that you can start enjoying eating healthy. So, I am always looking for ways to sneak veggies into meals so that my hubby and toddler will eat them. So these Zucchini Turkey Meatballs that I made where a hit. I served it for them with brown rice pasta and a little organic marinara sauce and they devoured it.

Zucchini Turkey Meatballs
2 lbs lean ground turkey
1/2 cup quinoa flakes
4 garlic cloves, minced
1 zucchini, grated
1/4 cup parsley, chopped
4 tbsp balsamic vinegar
2 tsp oregano
S&P to taste
2 egg whites
Parmesan cheese to taste (optional)
Preheat the oven to 350 degrees. Place all the ingredients in a large bowl and mix well. Form into meatballs and place on a lined baking sheet and bake for 20-25 minutes or until done.

I decided to eat RIDICULOUSLY CLEAN for 3 weeks and then I am going to take some pictures for my next book. So I have been playing around with healthy recipes to make them as healthy as I possibly can. So I took a basic turkey chili recipe and added a ton of veggies to it.
OMG, it was so good, you have got to try this with your family. Mine loved it and it was full of veggies and they didn't even realize it.
I just received a post on My Facebook Page that made me so happy. A fan who made a healthy meals from My Be Fit Moms Program and took it to her husband and all the other "cops" said it smelled and looked amazing. Check it out:
This ground turkey recipe is amazing and I have a great idea for you. You remember that Stuffed Tomato Recipe I gave you a few weeks ago on My Pinterest Board? You can stuff them with this chili instead or stuff it in a pepper and bake it and it would be divine. If you aren't following My Pinterest Boards, you are missing out on tons of easy, delicious and super healthy recipes, workouts and more........
This is right up there with my Turkeyloaf Muffins recipe from My Eat To Be Fit Healthy Recipes Book. Can you believe it? A turkey meatloaf made into mini muffins that are so tasty. I love all the recipes in there because they are so yummy and so healthy and best of all they are quick to make and you all know we need to make recipes that are fast.
Best Veggie Turkey Chili Recipe Ever
1/2 onion, chopped
1/2 red pepper and 1/2 yellow pepper, chopped
1 full bag fresh spinach
1-2 zucchini, chopped
2-3 garlic cloves, minced
2 lbs extra lean ground turkey
1.5 tbsp chili powder
2 tbsp cumin
1/2 tbsp oregano
Grill Seasoning to taste
Low-Sodium chicken stock
1 can kidney beans, rinsed and drained (optional)
In a deep skillet with a little stock, sauté the onions and garlic. Then add the peppers and zucchini and cook a few minutes. Then add in the turkey and brown. Add in all the spices and then add the spinach a little at a time, wilting with a little stock. Fold in well and if adding beans, add them now.
I hope you enjoy this healthy recipe as much as my family and I did. It really is delicious and you know what? You can easily make this in the crockpot and it can take you even less time to get a healthy dinner on the table.

I love making ground turkey because its fast, easy and yummy and so versatile so I make it about twice a week. Another thing I love is Mexican Flavors and Mexican Food......yeah guacamole and chips.....yum lol, hey I'm human and yes I love me some guac and chips.
Anyhow, this dish is like a turkey taco minus the taco shell, but its so good that you won't even miss the taco shell. But I did serve it to my hubby in a 100% blue corn tortilla and he absolutely loved it. I ate it with a side of Cauliflower pancakes that are to die for which Im teaching in my Eat To Be Fit healthy cooking program that starts Friday.
I love that we can eat something healthy and different every day and not feel like we are dieting. When you can master this and take the extra time to cook, you will get tremendous results.

2lbs lean ground turkey
2 celery stalks, chopped
1/2 red pepper, chopped
1/2 orange pepper, chopped
3 garlic cloves, minced
1/2 onion, chopped
2- 15ounce can diced tomatoes with their juice
grill seasoning to taste
oregano to taste about 1 tsp
1/4 cup fresh basil chopped
1 tbsp Worcestershire sauce
Parmesan cheese to taste
Place veggies in the bottom of crockpot, then put the turkey, the spices and then the Worcestershire sauce and diced tomatoes. Cover and set on high or low whatever you have time for. When ready, sprinkle with Parmesan cheese and serve.
You are going to love this meal. It took me about 6 minutes to assemble it all int the morning before work and when I got home my house smelled divine and dinner was ready, love that! If you don't have a crockpot you can also make this in a saute pan, cook all the veggies and spices first, then brown in the turkey, add the tomatoes and sauce and top with cheese and voila!

Healthy Ground Turkey Recipes- Healthy Comfort Turkey Bowl
Even in the summer months here in South Florida, sometimes its gloomy and rainy and all I feel like is COMFORT. What I really feel like doing is getting under the covers with a good cup of coffee and some chocolate chip cookies and sleep all day. LOL
But since I can't and shouldn't do any of those, I settle for a good ol' bowl of comfort (in a healthy way).
How about this for comfort?
There is nothing more comforting than a good bowl of soup or stew, so when I am feeling this way I make a delicious yet healthy meal like the one I am going to give you today.
By the way, I made this with a side of Herb Barley, thats what you see in the background in the picture above. Oh, it was divine.
You can also serve this with some quinoa or brown rice if you want to keep it gluten-free. I was experimenting with barley which I never use so wanted to give it a shot.

Taking these foods out of my diet was the one thing I did that gave me the best results. I now, after 2 kids actually have ABS and am in the best shape of my life. I mean, I have been in good shape for a long time now, but ABS defined like this..... never. I had bloat because I was eating so many of these foods and it didn't allow me to see the results.

Healthy Recipes: Healthy Comfort Turkey Bowl
2 lbs lean ground turkey breast
1 onion, chopped
2 celery, chopped
2 carrots, choped
3 garlic cloves, chopped
1 tsp each of oregano and basil
grill seasoning to taste
2 tbsp tomato paste
1 28-ounce can crushed tomatoes
1 15-ounce can cannelini beans, rinsed and drained
2 bay leaves
4 tbsp Parmesan cheese
4 cups low sodium chicken stock
In a large saucepan with a little stock over medium heat, sauté the onions, garlic, carrots and celery. Add the turkey and brown. Add the spices and seasoning and mix well. Add the tomato paste, crushed tomatoes, beans, bay leaves and stock. Cover and simmer for 10-15 minutes. Remove cover and add in the Parmesan and fold well.

Weeknights are always so busy. Especially dinner time because in a short amount of time I have to feed, bathe, bottle and put nico to bed....yikes! So it is really great to have some quick go to healthy recipes that are simple, yummy and easy to make. I know that you are busy too. Between work, the kids and the home, we are always looking for an extra hour here or there to get more done. That is why I love ground turkey recipes. They are versatile and usually no fuss meals that can me done in 30 minutes or less.
So that is why I am always working on bringing you great healthy recipes that you can make your own and that are fast and easy to make. Today's recipe was super easy and deelish. I had some left over sautéed summer squash and zucchini from a prior night. So I used these veggies for my meatloaf. If you don't have these leftover, it takes just 5 minutes to sauté these veggies in a little low sodium stock with some garlic. You can also use whatever leftover veggies YOU have in your fridge.
Healthy Recipes: Summer Veggie Turkey Meatloaf
2lbs ground turkey breast
2 egg whites
2 tbsp Dijon mustard
1/4 cup organic ketchup + 2 tbsp
1/4 cup balsamic vinegar + 2 tbsp
1/3 cup parsley, chopped
2 tbsp grill seasoning
2 squash and 2 zucchini, chopped and sauteed
Pre-heat oven to 350 degrees. In a large bowl, mix all the ingredients except the 2 tbsp each of vinegar and ketchup. Form into a meatloaf and place on a lined baking dish. In a small bowl mix the vinegar and ketchup and drizzle over top of loaf and bake for 20-25 minutes or until done.
This is also a great snack. You can throw it in a ziplock bag and throw it in your purse for a great healthy on the go snack. You can make this healthy recipe into meatballs or mini meatloaves. Its also very versatile in that you can use whatever vegetables you want.
Play with it and have fun and make it your own. Its easy, delicious and super healthy.

I love no-cook meals. You know, those types of meals that you can make without turning the stove on. I love them because they are fast and clean up is quick. That is why I am constantly trying to re-invent more ground turkey healthy recipes.
One of my favorite and family staples is my spinach turkey meatballs. They are delicious and super easy to make. I love healthy recipes like this. All I need is a bowl and a baking sheet and it all cooks in the oven in only 20 minutes.
And another plus, is that they are packed with veggies (which helps burn calories) and protein. So today, I made a spin off of my spinach turkey meatballs. They are very tasty, you have to try them. I love to make extras of this and eat them for a quick on-th-go snack.
Healthy Recipes: Spinach Turkey Pesto Meatballs
2 lbs lean ground turkey breast
2 egg whites
handful of shredded mozzarella cheese
1/4 cup prepared pesto
Pre-heat the oven to 350 degrees. Meanwhile, in a large bowl, mix all the ingredients and form the mixture into little balls and place on a baking sheet. Bake for 20 minutes or until done.
