Healthy Oatmeal Recipes- Chocolate Chip Cake
In the mood for Chocolate Chip Cookie Cake?
Well, now I can say you can actually have one and not be consuming a ton of calories.
This healthy recipe is so good. And what is best is that it takes minutes to make and you only make 2-3 servings. Good enough to satisfy a "craving", or feel satisfied with a healthy snack. Every single ingredient in this recipe is good for you so you can feel good about eating it.
Isn't it great that you can actually "ENJOY" eating healthy?
This is the trick to losing weight and keeping it off. Because if you can eat healthy consistently because you are actually enjoying it, then you will lose more weight and not end up going up and down on the scale.
This is why I follow my own MMF Healthy Meal Plans. Because the meals are so delicious that they don't even feel like "diet food" or even "healthy", yet I get amazing results.
Its so much easier to eat healthy consistently enough to get results when you actually enjoy what you eat.
Really, what you need to do is eat good 80% of the time. If you do this consistently, you will get amazing results. There is no need for DEPRIVATION or STARVATION....... Unless you are doing a fitness show.
What will prevent you from getting results and especially losing weight if that if what you are trying to do, is eating food that are inflammatory.
Inflammation in your digestive track makes it incredibly hard if not impossible to burn fat.
So if you are trying to lose a lot of weight or even just 2-5 lbs, make sure you are not eating any foods that are inflammatory.
There are 5 foods that are the most inflammatory.
I know how much this has an impact on peoples results so I went ahead and compiled those 5 foods in a nice little PDF for you and just explained them and gave you examples.

Oatmeal Chocolate Chip Mini Gluten-Free Cakes
1 cup oats (I use Bob's Red Mill Gluten-Free)
1/2 tsp vanilla extract
1 tsp cinnamon
2 tbsp agave nectar or Stevia to taste
1/2 cup unsweetened applesauce + 1-2 TBSP
1/2 cup non-dairy milk (I use DREAM Blends)
2 tbsp almond butter
1 scoop vanilla protein powder (I use PROGRADE)
2 tbsp chocolate chips (I use gluten free and dairy free DREAM)
***You can substitute fresh or freeze dried fruits for the chocolate chips or even nuts***
Preheat the oven to 350 degrees. Mix all the wet ingredients in a large bowl, then add all the dry ingredients. Fold in the chocolate chips and pour into ramekins. Bake for ~ 20 minutes or until done.
You should let your kids try these. My 3 year old son loves it. And hey, it can be a great option for you to pack in your kids lunches.

Crunchy Gluten-Free Chocolate Chip Cookies-Healthy Snack
I know I know........ Another chocolate chip cookie...... LOL
I just can't get enough! I have to keep making them and tweaking them until I find the best ones. And let me tell you this one is a winner. Its delicious! The taste is amazing, the texture is awesome and all the ingredients are good for you.
I have something that is going to make your life so much easier....... Its a shopping list for your pantry, fridge and freezer.

That is what I love about healthy recipes like this. Its almost hard to believe that a cookie this good can be good for you. But the truth is that it is! Don't you love healthy cookie recipes. I love that I can feel like I am indulging in something but it really is good for you.
Eating these helps me "EAT CLEANER". Believe it or not. Especially on the weekends when most people give themselves some EXTRA slack and eat MORE "off the diet". If I eat one or two of these cookies, I'm good, I don't feel the need to eat something that is NOT good for me. And even for afternoon snacks, you know that time of day that you get tired and sleepy and something COMFORTING sounds really good. Well, with a healthy snack like this, you can actually eat something yummy and comforting without "MESSING UP YOUR DIET".

Crunchy Gluten-Free Chocolate Chip Cookies
1 ripe banana, mashed
1/3 cup almond butter
2 tsp vanilla extract
3 tbsp Agave nectar
3 tbsp unsweetened apple sauce
1 cup quick cooking oats (I use Bob's Red Mill)
1/2 cup almond meal (I use Bob's Red Mill)
1 cup Brown Rice Cereal (Gluten-Free)
1 scoop vanilla protein powder (I use PROGRADE)
1/2 tsp baking soda
2 tsp cinnamon
3 tbsp chocolate chips gluten and dairy free (I use DREAM)
Preheat the oven to 350 degrees. Meanwhile, in a large bowl, mix all the wet ingredients. Then mix in the oats, almond meal, baking soda and cinnamon, and protein powder and mix well. Fold in the cereal and chocolate chips. Place on a parchment paper lined baking sheet in little spoonfulls. My batter made 15 cookies. Bake for 15 minutes.
These are absolutely delicious. I love that there is a little crunch to them. And every single ingredient is healthy and good for you! So give them a try and next time you have a CRAVING........ have one of these instead of something that is not good for you. I promise, it will satisfy your craving!

Believe it or not, sometimes I do get sick of chocolate......
I know, hard to believe huh?
But its true, especially during the hot summer months here in South Florida. So those times, I like to make things with fresh fruit. And what a better way to pair fruit than with some Greek yogurt. Check out this deelish little cup of fresh berries and yogurt that I made.
And that is exactly what I did for this PROTEIN PACKED snack. And you know me, I never skip out on making healthy snacks for the week. Being prepared all the time with healthy snacks and meals is the best way to ensure that you will stay on track with your "DIET".
Its a lot harder to binge or eat something "BAD", when you have good options in your fridge. But when you have nothing, and the hunger shows up, it is really hard to have WILL POWER. So save yourself the frustration and hard work, and prep a few snacks once a week and have them ready for when its time to eat. And remember, the way to SPEED METABOLISM so that you can BURN CALORIES all day long, is by eating a HEALTHY MEAL every 3-4 hours.
I make a healthy MENU every week and I plan out all my meals and snacks and do my grocery shopping once a week. I am always prepared because that is the key to getting good and consistent results. I take my Eat To Be Fit Healthy Recipes Book and I look through it and pick out my DINNERS for every day of the week. Then I make extra so that I have left over's for lunch the next day. And in the snacks section or on My Pinterest Boards, I find a Healthy Snack Recipe and I also make that.

And if you have nothing prepped, have a PROTEIN BAR. Always keep some handy. But most bars are full of excuse my language..... CRAP. But I did find one that is 100% healthy. Its actually made with 100% natural ingredients, no GMO's, organic and low in carbs... and did I say DELICIOUS? Try them, and they always have some sort of a special (you can only get them online). Here is the recipe.......
Blueberry Protein Yogurt Parfait
1 1/4 cup plain Greek Yogurt
1/4 tsp vanilla extract
1/4 tsp cinnamon + more for sprinkling
1/2 cup fresh blueberries
1/4 cup Muesli (I used Bob's Red Mill)
1/2 scoop vanilla Protein Powder (I use PROGRADE).
Put the berries in a microwave safe bowl and microwave for about 1-2 minutes or until the berries are melted and sort of look like jelly. Let cool and meanwhile in small bowl mix the yogurt with vanilla, protein powder and cinnamon. Set aside and in a small skillet toast the muesli with a little cinnamon until golden brown and toasty. Set aside and let cool. To assemble, pour a little of the blueberries into 2 small cups. Then place a few heaping tablespoons of the yogurt mixture in each. Sprinkle with a little cinnamon and a few tablespoons of the muesli. Pour the rest of the yogurt on each cup, reserving a few dollups for the top. Divide the rest of the blueberries between the two cups and top with a dollup of yogurt on each and a sprinkle of muesli. Keep refrigerated.
Seriously, this is not only a gorgeous snack but its packed with nutrients, protein and so good for you. Its also incredibly delicious and probably took me about 5 minutes total to make.

This one was inspired by a recipe on Pinterest. I love to get ideas from there and then just FITNESSIFY them. That is make them healthy but FIT healthy.

I love this recipe for two reasons. Its delicious and easy to make. Oh and also, crunchy! Love that!

Stuffed Crunchy Cucumber Boats
1 English cucumber, cut in half and take flesh out with mellon baller
1 cup cottage cheese
1 scallion, chopped
2 tbsp parsley, chopped
flesh of cucumber, chopped
Mix all ingredients in a bowl and spoon onto both sides of cucumber. Keep refrigerated.

You are going to be proud of me for this one!
So, last week I was busy cooking for 21 people. I cooked for about 3 days. I made from the appetizers through the desserts and all from scratch. YIKES!
And even though there was so much to make, I still made an extra dish....... Pizzookie!
I knew that with the Holiday approaching and being in the kitchen cooking so much, I was going to need a healthy snack. But one that tasted yummy because I was cooking some yummy stuff and I didn't want to be tempted. So I wanted the snack to taste so yummy that I wouldn't care for the food i was cooking.
Thats what I love about Healthy Cooking, it can be so tasty and enjoyable. And I love that people are starting to realize that they don't have to feel deprived in order to lose weight and get great results. Like today, I had My Almond French Toast for breakfast from My Eat To Be Fit Book.....soooo yum :)

I fitnessified this recipe from my friend Katie from Chocolate Covered Katie. I love her recipes and even though they are healthy I step them up a tad more and make them FITNESSIFIED!
She calls them this because they are a mix between a cookie and a pizza (cuz it looks like one).

Chocolate Chip Pizzookie
2 cans chickpeas (rinsed and drained)
1 cup quick oats (I use gluten-free)
1/4 cup + 2 tbsp pumpkin puree
2 tsp pure vanilla extract
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp pumpkin pie spice
3 tbsp coconut oil
2 tbsp coconut sugar
5 Stevia packets
1 1/2 scoop vanilla protein powder (I use BB3 Formula 1)
3-4 tbsp dairy-free, gluten-free chocolate chips
Pre-heat the oven to 350 degrees. Blend all ingredients in food processor except chocolate chips. Fold in the chocolate chips and place in a 10-inch spring form pan. Bake for 35 minutes or until done. Let it sit for a few minutes before digging in.
I can't tell enough how delicious this is. I had it with a cup of coffee and man oh man was it amazing. It was so good that even though I baked a home made apple pie and pumpkin brownies and there were a ton other desserts, all i wanted was a piece of this Pizzookie.

I love coffee and chocolate, those are my indulgences. So what better way to enjoy a good post-workout protein shake than with the flavors of coffee and chocolate. Now add in some bananas and you got yourself one crazy good banana split. Lol, ok maybe not exactly but very close.
This protein shake recipe is so good that I even like to have it as a healthy snack in the afternoon when I feel like having a cup of coffee and a dessert. It takes care of both cravings, what could be better? But when I don't have a shake for a snack, I love to have My from My Eat To Be Fit Healthy Recipes Book, its DIVINE!
I love adding bananas to protein shakes and smoothies. Not only does it add great sweet flavor, but I freeze them and it gives the smoothies a great consistency. And thats not all, check out some of the health benefits of bananas.

- Helps improve MOOD (high in Tryptophan an amino acid called the "mood enhancing protein".
- High in Vitamin B6 (good for blood and immune health).
- Good for your heart, nerves and bones because of potassium.

Ok, so most people freak out because of the sugar in a banana, but seriously it only has 14 grams in a banana and I usually use 1/4 of a banana so what are you getting an extra 3 grams of sugar? Big deal, worry about the cookies, cake, crackers, and alcohol you consume, not a few grams of sugar that has so many more benefits to you.

You know me and chocolate, right?
So you know that I am always looking for new recipes to revamp and make "healthier", especially chocolate ones. I find that if you have something really yummy readily available, something that is healthy but that feels like an "indulgence", you will do really well with your nutrition.
I have all my clients make one of my Tasty Healthy Snacks recipes that I post on My Pinterest Boards every week. Since they have started doing this, they not only eat so much "cleaner", but they are really enjoying playing around with the recipes. You are going to love this one, check it out:
I find that I don't even feel like having a "cheat" if I have one of these healthy snacks. Because the snack itself feels like a cheat but without the guilt because its all clean, healthy and good for you ingredients. One of my favorites is My Oatmeal Cookies from My Eat To Be Fit Healthy Recipes Book, they are crazy easy to make and so yummy its crazy to think they are so healthy.

Anyhow, this recipe is so yummy, its a good change to the muffin, cookie, pancake snack because its actually a little frozen treat. Its a great healthy snack. I just had one now after doing My Butt & Inner Thigh Workout. OMG, if you haven't tried it, go to My YouTube Channel now and try it, its a great one!
Ok, here is the recipe:
FROZEN CHOCOLATE CHIP TREATS (Gluten-Free)
3 ripe bananas, mashed
1 1/2 tbsp almond butter
1/4 tsp maple extract or vanilla extract
3/4 cup Brown rice cereal
1 scoop vanilla protein powder (I use BB3 Formula 1)
1 1/2 cups oats (I use Gluten-free)
3 tbsp dairy free, gluten free chocolate chips
3 tsp organic unsweetened cocoa powder
shredded coconut to taste
Mash the bananas, almond butter and extract together. Fold in the rest of the ingredients except the coconut and mix well. With an ice cream scooper, scoop into a muffin pan and sprinkle with coconut and freeze. Store frozen.

I love cooking on Sundays. I'm not in a rush like during the week. So I make myself a cup of coffee and while Nico and hubby nap, I get in the kitchen and make some fun stuff for the week. I especially like to play around with some healthy recipes for easy and quick snacks for in between meals. This las Sunday I made this delicious Blueberry Crumble Squares. This one definitely beats the Dr. Oz Protein Cookies that I posted last week on My Pinterest Board. Which by the way got REPINNED a ton of times. I'm glad you guys liked them.
They are not only DELICIOUS, but they are GLUTEN-FREE and super EASY TO MAKE. It doesn't get any better than that.

Protein Blueberry Crumble Squares
1 cup coconut flour
1 scoop vanilla protein powder (I use BB3 Formula 1)
2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
4 Stevia packets
2 ripe bananas, mashed
2 tbsp coconut oil
1 tsp vanilla extract
1 tsp coconut extract
1 cup almond milk plus more to get the right consistency
1 cup frozen blueberries
Mix all wet ingredients in a bowl. In a separate bowl, mix all the dry ingredients. Pour the dry into the wet ingredients and mix well. Add a little more milk if you need until it is sort of like cookie batter, a little wetter. Then fold in berries. Spray an 8x8 baking dish with a little coconut oil spray or any spray or coconut oil. Pour batter in and bake for about 40 minutes at 350 degrees.

Tasty Snacks Tuesdays is one of my favorite days of the week. I just love all these healthy snacks recipes. I guess it could be because I love food so much but honestly, if you are making all these healthy recipes that I have been posting on My Pinboards, then you are probably just as happy as I am on Tuesdays.
Actually my morning snack today was this amazingly delicious Protein Oatmeal Casserole. It is like a platter of goodness. Its healthy, comforting, tasty, fruity and just simply divine. I had this with a good cup of coffee (thank goodness for my Keurig), and man was I one happy camper.
What I love about this healthy snack is that I have my protein, healthy carbs and healthy fats all in one dish. It doesn't get better or easier than that. And it was so easy to make.
Nothing beats being prepared peeps. That's why I give you all these healthy recipes and I always tell you to PLAN PLAN PLAN. Eating healthy and getting great results is EASY when you are prepared and when you can TRULY ENJOY it.
Nothing SUCKS more (excuse my language), than feeling deprived, hungry and miserable. There is no need to feel deprived and eat bland and boring food in order to get great results. So stop thinking and talking about it and saying "one of these days I'm going to make one of Michelle's recipes", and start actually making them. I promise you won't regret it.

Protein Oatmeal Casserole Goodness
- 2 cups oats (I used gluten-free)
- 4 Tbsp cup coconut sugar
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 1/2 scoops vanilla protein powder (I used BB3 Formula 1)
- 1/2 cup walnut pieces
- 1/4 cup strawberries and 1/4 cup blueberries
- 2 cups almond milk
- 1 large egg
- 3 tbsp coconut oil
- 1 tbsp vanilla extract
- 1 ripe banana, peeled and cut in slices
Pre-heat the oven o 375 degrees. Spray a casserole dish with a little coconut oil spray or baste with coconut oil. In a large bowl mix the oats, coconut sugar, baking powder, cinnamon and protein powder. In a separate bowl, mix the milk, egg, oil and extract. Line the dish with sliced bananas and half the berries. Pour the wet ingredients over the mixtures as to cover it completely. Tops with the remaining berries and walnuts and sprinkle with a little more cinnamon. Bake for 30-35 minutes.

Have I told you my new trick to staying healthy even on the weekends?
All these delicious, easy and healthy snacks that I have been posting on My Pinterest Boards are so good that when I eat them, I feel like I am having a treat. When I realized how much I was enjoying these healthy snacks, I decided to start making them for the weekend to see if it would help me eat cleaner since the weekends tends to be the hardest time to "eat clean". Wouldn't you agree?
And guess what?
It totally does! When I eat these delicious and healthy snacks that I have been making, I don't feel like I need to eat a chocolate chip cookie (which you know is my favorite "cheat food"). And its not just me........ I have told so many clients about this trick and it is helping them too.
Seriously, you have to try this trick. Just go to My Pinterest Board and pick out one of the Tasty Snacks Recipe and make them for the weekend. When you feel the urge to have something sweet or naughty, just grab some of that and I promise you will feel satisfied.
I also take these with me to birthday parties, ball games, the beach, or whatever we are doing during the weekend. And while people are snacking on yucky and unhealthy food, I feel GREAT about my healthy snack. And I feel so satisfied and happy because my snacks are so darn good.
This healthy snack recipe I'm giving you today, may become one your favorites. I decided to make more balls, since my last balls (coco-oat bites) where the most REPINNED on Pinterest. Everyone loved them and they were even posting pictures of them on My Facebook Page, which I love, by the way. Healthy Cookie Dough Bites
2/3 cup walnuts
2/3 cup sliced almonds
2/3 cup oats
1/8 cup almond butter
1/8 cup agave nectar
1/2 tsp cinnamon
1 tsp each of vanilla extract and almond extract
3 tbsp gluten-free and dairy-free chocolate chips
In a food processor, blend all ingredients except chocolate chips. Pulse until it becomes well incorporated and at the end pulse in the chips as to just mix in. Line a baking sheet with parchment paper and roll the mixture into little balls and freeze for at least an hour. Keep in the freezer.

I am always trying to come up with ways to make it easier for us to get better results, tricks that will help us be fit and fabulous but also not be miserable and deprived. So here is my new one..........
Every Friday, I make one or two of my favorite Tasty & Healthy Snacks and I leave them in my fridge to enjoy during the weekend. Most of these recipes are so good that you don't even feel like they are healthy. So basically, you feel like you are having a treat even though its good for you. By the way, you can find all these recipes on My Pinterest Board for Tasty & Healthy Snacks. Seriously, try them, you will not regret investing the time in it.
You know how much I love chocolate chip cookies, but with healthy recipes like the one I'm giving you today, I don't even feel like I need them. Eating a few pieces of something like this gluten-free chocolate chip bar with a good cup of coffee makes me feel like I'm having a treat SANS THE GUILT. So, try this technique, I promise it will help you eat cleaner while enjoying the yummy food.
And make sure that you are constantly checking My Facebook Page as I post at least 3 NEW HEALTHY RECIPES per week and 2 Workouts & Exercise videos, and you don't want to miss them because they are amazing. I can't tell you how much great feedback I get from it.
Gluten-Free Chocolate Chip Bar
2 cups oats (I use Gluten-Free)- roast in oven at 425 degrees for 10 minutes and let col
1 cup almond butter
2 tbsp agave nectar
1/2 cup unsweetened apple sauce
2 tbsp. dairy free and gluten free chocolate chips
1 cup vanilla protein powder (I use Prograde)
1 tbsp. cinnamon
2 tbsp Flax meal
Mix all ingredients in a large bowl. You may have to use your hands to mix and incorporate well. Place in a 8 x 11 baking dish lined with parchment paper and bake at 350 degrees for about 18 minutes or until done.

What can I tell you today other than CHOCOLATE makes me so happy.
I don't think I have ever met a person who doesn't love chocolate. So obviously, I always try to come up with guiltless ways to enjoy chocolate.
This healthy snack recipe was born in minutes. It was Friday afternoon and I was ready for a cup of Joe and needless to say the chocolate craving crept in. But how great that we can now enjoy yummy healthy snacks without the excess calories.
This is what its all about people, learning to enjoy eating in a healthy way!
Every Friday, I put Nico in the kitchen and give him some bowls and spatulas and have him cook with me. Its really important to get the kids involved in the kitchen with you. We bake delicious and healthy treats for the weekend. I love it because we make delicious treats that taste so good but they are healthy and I can control the quality and quantity of the ingredients. So now I don't even really need a chocolate chip cookie because I have all these delicious snacks available and they taste just as good.
By the way, try this quick leg workout on the weekend. You don't need any equipment and it just takes minutes. Its a great fat blasting workout to try on the weekend. If you want an upper body workout also, you can also get that on My YouTube Channel.
So take this tip and use it, it will help you have a healthier weekend. There are so many healthy recipes for yummy snacks on My Website & My Pinterest Boards so make sure to browse around and make a little shopping list so you can make some healthy treats next weekend.

Healthy Recipe For Chocolate Protein Cake
3/4 cup egg whites
1/4 tsp almond extract
1/2 tsp cinnamon
2 tbsp sliced almonds
Mix all ingredients in a bowl and pour into ramekins. Bake for 20 minutes or until done. Sprinkle the top with toasted sliced almonds.

Who doesn't like GRANOLA BARS?
Everybody loves granola bars, but most of the ones you buy at the store are full of sugar and fat. So stay away from those.
I am always looking to find or make great yummy but healthy snacks for my son Nico. And I always see moms giving their kids granola bars, in an attempt to give them a healthy snack, and it kills me that they have no idea how bad they are for them.
So, I took it upon myself to make a yummy granola bar that Nico would like and that would be good for him. And without realizing it became an ADULT FAVORITE also. I have made this healthy recipe for a granola bar several times and had many people try it and they fall in love immediately, its LOVE AT FIRST BITE!
Its a great snack to have in between meals or on the go! Your kids will love them, so make sure to make plenty. And remember, moderation is key, because with a snack this yummy, you could start and not be able to stop. So slice yourself a piece, eat it and be done!

Enjoy this Love At First Bite!
Healthy Recipes For Granola Bars
1/2 cup almond butter, cashew butter, sun butter or peanut butter
1/4 cup coconut oil
1 tbsp agave nectar or honey
1/2 cup freeze dried raspberries
2 1/2 cups gluten-free oats
1/2 cup milk chocolate chips (gluten-free & dairy-free), you can omit this is going hard core
In a small saucepan over medium heat, melt the nut butter with coconut oil and agave. Turn off heat and fold in the rest of the ingredients. Pour into an 8x8 baking dish and refrigerate for at least an hour.

Everyone seems to be trying to eat GLUTEN-FREE, and I don't blame them. Honestly, I am not gluten intolerant but I try to eat mostly Gluten-free.
Well, here is my thinking......... If there are diseases that are caused by this food (celiac disease), I certainly don't want to eat it. There are people that are autistic that are put on Gluten-Free Diets and get significantly better. So, why eat it anyways.
Also, gluten is a high inflammatory food for the gut and if you have inflammation in the gut, it is hard to burn fat effectively. I don't know about you but with all the great foods out this day that are gluten-free and with all the great recipes (like this one) and great natural foods that don't have gluten, I don't think it is a big loss to omit gluten from my diet.
So to hook you up, here is another gluten-free recipe for a healthy snack. Its delicious, easy to make, gluten-free, and super healthy.
Healthy Snack Recipe: Blueberry Protein Cake
3/4 cup egg whites
6 tbsp Vanilla Protein powder (I used BB3 Formula 1)
3 tbsp coconut flour
3 tbsp unsweetened apple sauce
3 tsp vanilla extract
3-4 stevia packets
1/2 cup freeze dried blueberries.
Preheat the oven to 375 degrees. Mix all ingredients except the berries in a big bowl and incorporate well. Fold in the berries and pour into 3-4 ramekins and bake for about 27 minutes or until golden brown and cooked inside.
How Delicious does this look?

Oh yeah, I know what you are thinking........ There is no way a cinnamon roll is healthy. Well, my friends, these healthy muffins taste just like cinnamon rolls but they are healthy.
Can you believe it?
I know, I could barely believe it when I tasted them. I totally even surprised myself :)
I love making these kinds of snacks because they are easy to make, great to make a ton in advance, easy to store, and easy to eat on the road. And best of all, they taste so darn good with a good cup of coffee :)
I tried these out one day when I was looking to make a healthy and fueling snack for my family and I to take to my good friend Billy Beck III when he ran 51 miles for the American Cancer Society (he raised $30,000....wow). Anyhow, I got inspired by this amazing cook on healthful pursuit. So I tweaked it a bit and they came out so good.
I love being able to enjoy what I eat.
I love that I can truly say that I enjoy eating healthy.
Because I love food and I love to eat and if I had to deprive myself all the time, I would be miserable.
I know that I wouldn't get as good as results as I get right now because I wouldn't be able to be CONSISTENT. And consistency is how you get really good and lasting results.
I try to never deprive myself. I have really learned to just eat clean all the time and when I want to eat something that isn't optimal, to just have a bite and then be done. This has helped me so much. I have never gotten better results than I have now by adopting this way of thinking.
And it's great, I really never ever feel like "I'm DIETING".
I mean there are some foods that I try to always stay away from because they are super INFLAMMATORY and inflammation is not only the root of most DISEASES, but it also doesn't allow you to BURN FAT effectively. So even if you exercise 7 times a week and eat 800 calories a day...... If you eat some of the foods on "THIS LIST", you may possibly not be able to burn ONE OUNCE of fat.
So before I give you this crazy, to die for, yummy recipe that tastes like a cinnamon roll, I want to give you this list of foods so that you can get them out of your diet and be able to see much better results.
I also put together a list of the foods I always have and the foods that are CRUCIAL to include in everyones nutrition in order to not only be healthy but to also be able to lose weight and be able to gain LEAN AND TONED muscle.
This is a lot of information and I wanted to put it together in a way that you can see it, print it and put it somewhere in your kitchen as a reminder. So you can download it here in THIS LINK. Healthy Snack Recipe: Cinnamon Roll Protein Muffins
Cinnamon Roll topping
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 scoop vanilla protein powder (I use PROGRADE)
- 1/2 tsp baking soda
- 3 eggs
- 1/3 cup coconut sugar or brown sugar
- 1/4 cup coconut oil
- 2-4 tbsp coconut milk creamer (I used SoDelicious Hazelnut) (eyeball this to get right consistency)
- 1 tablespoon vanilla extract
- 1/4 cup Gluten-free oats
- 2 tbsp extra virgin coconut oil
- 2 tbsp unsweetened shredded coconut
- 1 tbsp coconut sugar
- 1 tbsp cinnamon
- Preheat oven to 350F and lightly spray a muffin pan (I use coconut oil spray).
- Mix the topping and set aside (oats, coconut sugar, cinnamon, coconut oil, and coconut in a small bowl).
- Combine almond flour, coconut flour,baking soda and protein powder in a medium bowl.
- In another bowl, whisk together eggs, coconut sugar, coconut oil, creamer and vanilla.
- Mix in the dry ingredients into wet, combine well and pour into muffin pan.
- Once you mix in the dry ingredients, if the batter is too thick, add creamer a little bit at a time until you get the right consistency. I eyeballed this part at the end.
- Spoon topping onto muffins and bake for ~ 22 minutes, or until golden brown and cooked through the middle.
- Allow to cool before taking out of muffin pan.
I eat these as an in between meal snack all the time as part of my BeFit Moms Meal Plan.
Yes, sounds crazy, but I actually follow my BeFit Moms Meal Plan on a daily basis. Yep, I don't just tell people to follow it, I do it myself. I actually live by it.
It's the only way I can organize myself enough to cook and eat clean meals every day. It's the only way I can make sure I have yummy meals that are not just good for me and my family but that are delicious and that I enjoy.
That means more to me than anything. Because I know that if I don't enjoy what I eat, I won't be able to be consistent. That's just me because I love food and I love to eat.
You may not be that way, you may be able to eat bland and boring food and the same food every single day and be just fine and never want to binge or go crazy eating everything. But I certainly can't be consistent eating that way so I do take a few extra steps in cooking and planning by following my BeFit Moms Meal Plan, but I get great results and I don't have to cook "DIET FOOD" for me and other meals for my family.
They eat the same thing I do. It's the best!

Moms are amazing jugglers. We have to juggle so much all at once. No wonder its so hard for us to be in shape, have energy and feel good about ourselves...... Most of the time we are busy doing everything for everyone else.
So since I know this, but I also know how important it is for you to eat every few hours to speed up your metabolism so that you can not only burn fat optimally but also have the energy to do everything you need to know, I have a great super healthy and super easy healthy snack recipe for you.
Its my famous BeFit Moms Oatmeal Pancake. They are easy to make and you can make about 6 of them in 10 minutes, and you can store them in the fridge and have healthy snacks for all week.
BeFit Moms Oatmeal Pancake:
1/2 cup oatmeal
1/4 cup low-fat cottage cheese
3 egg whites
1/4 banana or any fresh fruit
2 tbsp walnuts or almonds, chopped (optional)
Sweetener to taste: Agave Nectar, Coconut Sugar, Stevia, Splenda
Cinnamon to taste
In a blender, blend all the ingredients (except if using any fruit other than banana, which you would fold in to the batter). Cook on a small skillet at medium heat like a normal pancake.
Try this healthy snack recipe! It will become a family staple, and the kids love them too! My 2 year old son loves them. Trust me I know how hard it is to juggle work, kids, hubby, and life itself. But being in shape and feeling good about yourself will help you with all these things.
