Healthy Pesto Turkey Meatballs

My secret for being able to eat healthy CONSISTENTLY is to have a plan, always.
You must know me by now, if you have been following me for a while.....
I make a new meal plan every Saturday with a shopping list to go with it. Then I do my groceries on Sundays and stock up on everything I will need for the week.
Having A Plan
Having a plan of what we are eating all week and having it all available helps me be able to have healthy meals literally every day for lunch and dinner and it also saves me a ton of time and money.
I don't eat out unless I have to or want to for a fun play date or something, so I don't spend money on yukky food and I can control the quality of the food I eat. It's also easier to have WILL POWER when you have the food already there. If there are no ingredients at home to make something healthy and you don't know what to make nor do you have the energy to figure it out, its a lot easier to start picking at crap and making bad food choices.
After years and years of doing it all kinds of different ways and trying different diets, etc., I have found this to be the best way. I get the best results, with the least amount of time and I actually enjoy it. I don't feel like I'm dieting, I don't feel hungry all the time, I don't spend a ton of time cooking.... It's amazing!
And after 2 kids I am in the best shape of my life.
When I make my meal plan I make sure to make different foods.
I make sure to have fish, chicken, steak, turkey.......... I would hate to just eat chicken all the time.
That's when you say... "ugh, I can't eat like this anymore, screw it, Ill eat what I want, because eating like this sucks".
I feel ya!
Need A Meal Plan But Don't Know How To Make One
Now, its not that easy to be making different meals all the time, and finding ones that the whole family likes and are healthy and tasty. So I do spend a lot of time doing that, but you don't have to because I do all the work for you! I am always coming up with recipes like this to help you make your own meal plans.

What You Shouldn't Eat
Because if you are not eating the proper foods and you are consuming foods that are very inflammatory, you will not get results no matter what you try to do. So let me share with you a list that I compiled of the 5 FOODS that you should absolutely get rid of in your diet if you would like to see any kind of results.
Because eating these foods cause so much inflammation in your digestive system that its close to impossible to lose weight. Inflammation in the body does not allow you to burn fat.

Ok, now that we have that clear, I can give you this yummy recipe that I made one day when I needed to get dinner done in like 5 minutes.
You gotta love these kinds of recipes.
I literally looked in my pantry and fridge, threw some stuff together and voila..... this amazingly delicious recipe came alive. These turkey meatballs are moist, full of flavor, super healthy and ridiculously easy to make.
By the way, I made a really great Pantry, Fridge & Freezer Grocerry List. It's pretty much what you should have stocked at all times. If you follow it, you can basically make any of my recipes and be able to eat super clean all the time.

Ok, now let me give you the recipe.
Healthy Pesto Turkey Meatballs

Ingredients:
2 lbs lean ground turkey breast
3 -4 tbsp prepared pesto (or you can make your own)
1/2 cup low fat cottage cheese
2 egg whites
1 tbsp italian seasoning
1/4 cup low salt, low sugar marinara sauce
s&p to taste
Instructions:
Preheat the oven to 350 degrees. Meanwhile, mix all the ingredients in a big bowl and make into meatballs and place on a lined baking sheet and bake for ~25 minutes or until done.
How easy does that seem?
The day I made these I was in a super rush to get dinner on the table fast. But I was thinking that if I had some thawed spinach, I could throw that in there for some extra fiber and another opportunity to burn more calories.
I throw spinach into everything I can because it doesn't really taste like anything so its a great way to sneak veggies in to the kids and hubby. So you can try adding a whole package of frozen spinach, thawed.
I served this with brown rice pasta and I just added little of the marinara sauce and pesto that was left over in the jars.
I guess you could also throw some of the frozen spinach in the water while your boiling the pasta. I do that all the time when I make brown rice or quinoa pasta. The kids don't even taste the difference.
Literally took about 5 minutes of my time to prep this meal and it was so yummy.
It's perfect for a quick healthy fun week night meal. And you got your protein, carbs and veggies all in one meal.
I'm telling you, making yummy meals and different ones all the time will help you tons with being able to stick to your "diet".
